  • 3 cups boneless, skinless chicken breasts (about 4 breasts), diced
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (any color)
  • 3 cloves fresh garlic, minced
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Juice of 1 lime
  • Fresh cilantro (optional)

Instructions

  1. Prep your vegetables by chopping the onion, bell peppers, and garlic.
  2. In a large pot over medium heat, add olive oil. Sauté the chopped onions and bell peppers until softened (about 5 minutes). Add garlic and sauté until fragrant.
  3. Add diced chicken to the pot and cook until golden brown on all sides (approximately 7 minutes).
  4. Stir in cumin and chili powder, mixing well before adding diced tomatoes (with juices) and rinsed black beans.
  5. Pour in chicken broth until everything is submerged. Bring to a gentle boil, then reduce heat to simmer for about 20 minutes.
  6. Just before serving, squeeze fresh lime juice over the chili and garnish with chopped cilantro if desired.
