- 1 bell pepper, chopped (any color)
- 3 cloves fresh garlic, minced
- 1 can (15 oz) black beans, rinsed
- 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
- 4 cups low-sodium chicken broth
- 2 tsp ground cumin
- 2 tsp chili powder
- Juice of 1 lime
- Fresh cilantro (optional)
Instructions
- Prep your vegetables by chopping the onion, bell peppers, and garlic.
- In a large pot over medium heat, add olive oil. Sauté the chopped onions and bell peppers until softened (about 5 minutes). Add garlic and sauté until fragrant.
- Add diced chicken to the pot and cook until golden brown on all sides (approximately 7 minutes).
- Stir in cumin and chili powder, mixing well before adding diced tomatoes (with juices) and rinsed black beans.
- Pour in chicken broth until everything is submerged. Bring to a gentle boil, then reduce heat to simmer for about 20 minutes.
- Just before serving, squeeze fresh lime juice over the chili and garnish with chopped cilantro if desired.
