  • Juice of 2 fresh lemons
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped

  • 1 cup low-sodium chicken broth
  • Juice of 1 fresh lemon
  • 1 tbsp cornstarch mixed with 2 tbsp cold water
  • 1 tsp dried oregano

Instructions

  1. Gather all ingredients and marinate chicken in lemon juice, garlic, olive oil, oregano, salt, and pepper for at least 30 minutes.
  2. Heat olive oil in a skillet over medium heat and sear marinated chicken for 5-7 minutes on each side until golden brown.
  3. Remove chicken; add chicken broth and additional lemon juice to the skillet, scraping up browned bits.
  4. Thicken sauce by whisking in cornstarch mixture until smooth; stir in grated Romano cheese until melted.
  5. Return chicken to the skillet, spoon sauce over it, and cook for an additional minute before serving hot.
