  • 1 cup plain breadcrumbs
  • 1 large egg
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • Salt and pepper, to taste
  • Fresh parsley (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the chopped onion in olive oil until translucent. Add minced garlic and cook for an additional minute.
  3. In a large bowl, mix together ground beef, sautéed onions and garlic, breadcrumbs, egg, Worcestershire sauce, ketchup, salt, and pepper until just combined.
  4. Shape the mixture into a loaf on a lined baking sheet or in a loaf pan.
  5. In a small bowl, whisk together balsamic vinegar and additional ketchup; brush this glaze over the meatloaf.
  6. Bake for about 1 hour or until it reaches an internal temperature of 160°F (70°C). Let rest before slicing.
