- 1 whole chicken (4–5 lbs)
- 2 tbsp extra virgin olive oil
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- Juice of 1 lemon
- 4 cloves garlic, whole
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and rub olive oil all over it.
- In a bowl, mix salt, pepper, minced garlic, chopped herbs, and lemon zest. Rub this mixture under the skin and into the cavity.
- Squeeze half of the lemon juice inside the cavity and place squeezed halves along with garlic cloves in there.
- Tie the legs together with kitchen twine for even cooking.
- Place the chicken on a roasting rack in a baking dish and roast for about 1 hour and 20 minutes until juices run clear.
- Allow the chicken to rest for at least 10 minutes before carving.
