Description

Oven-roasted chicken is a delightful dish featuring crispy skin and juicy meat, perfect for family dinners or special occasions.


Ingredients

  • 1 whole chicken (45 lbs)
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • Juice of 1 lemon
  • 4 cloves garlic, whole
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and rub olive oil all over it.
  3. In a bowl, mix salt, pepper, minced garlic, chopped herbs, and lemon zest. Rub this mixture under the skin and into the cavity.
  4. Squeeze half of the lemon juice inside the cavity and place squeezed halves along with garlic cloves in there.
  5. Tie the legs together with kitchen twine for even cooking.
  6. Place the chicken on a roasting rack in a baking dish and roast for about 1 hour and 20 minutes until juices run clear.
  7. Allow the chicken to rest for at least 10 minutes before carving.
