Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together whole wheat flour, protein powder, baking powder, and baking soda.
  3. In another bowl, mix together Greek yogurt, eggs, honey (or maple syrup), and milk until well combined.
  4. Gently fold fresh blueberries into the wet mixture.
  5. Combine the wet ingredients with the dry ingredients until just mixed; avoid overmixing.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 18-20 minutes until golden brown and a toothpick inserted comes out clean.
