  • 1 medium yellow onion, chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 2 cups creamy mashed potatoes
  • 1 cup sharp cheddar cheese, grated
  • 1 tsp dried thyme

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onions and minced garlic until translucent (about 5 minutes).
  2. Add ground beef, cooking until browned. Stir in diced carrots and peas and cook for an additional 5 minutes.
  3. Pour in beef broth and sprinkle with dried thyme, salt, and pepper. Simmer for 10 minutes.
  4. If making mashed potatoes from scratch, boil peeled potatoes until tender (about 15 minutes). Mash with butter and milk until creamy; season with salt.
  5. Preheat oven to 400°F (200°C). Spread the meat mixture evenly in a baking dish and layer mashed potatoes on top.
  6. Sprinkle grated cheddar cheese over the potatoes and bake for 20-25 minutes or until golden brown.
