  • 4 salmon fillets (6 oz each)
  • 2 cups fresh spinach
  • 1/2 cup oil-packed sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon

Instructions

  1. Prep your ingredients: chop the sun-dried tomatoes and mince the garlic.
  2. Heat olive oil in a skillet over medium-high heat. Sear the salmon skin-side down for 4-5 minutes until golden brown. Flip carefully.
  3. Remove salmon temporarily; add garlic and sun-dried tomatoes to the skillet. Sauté for 1-2 minutes until fragrant.
  4. Pour in heavy cream and lemon juice, stirring well while scraping any bits from the pan. Allow it to simmer until slightly thickened.
  5. Add spinach and Parmesan cheese, stirring until the spinach wilts and cheese melts.
  6. Return the seared salmon to the skillet, allowing everything to cook together for an additional 2-3 minutes.
