  • 8 oz cream cheese, softened
  • 3 large eggs
  • 1/2 cup whole milk
  • 1 cup fresh blueberries
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, beat cream cheese with 1/4 cup sugar until smooth. Mix in 1 egg and 1/2 tsp vanilla; set aside.
  3. In another bowl, whisk together flour, remaining sugar, baking powder, and salt. In a separate bowl, combine melted butter, remaining eggs, milk, and vanilla.
  4. Gradually add wet ingredients to dry ingredients until just mixed; fold in blueberries gently.
  5. Pour half the batter into the pan, dollop cream cheese mixture on top, then cover with remaining batter and sprinkle extra blueberries.
  6. Bake for 40-50 minutes or until golden brown and a toothpick comes out clean.
