  • 12 jumbo pasta shells
  • 8 oz fresh cremini mushrooms, chopped
  • 4 oz fresh button mushrooms, chopped
  • 4 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup freshly grated parmesan cheese, divided
  • 2 cups fresh spinach, chopped
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C). Boil salted water in a large pot and cook the jumbo pasta shells until al dente; drain and let cool.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add chopped mushrooms and cook until softened (5-7 minutes).
  3. Stir in chopped spinach and season with salt and pepper; cook until wilted.
  4. Remove from heat and mix in cream cheese and half of the parmesan cheese until combined.
  5. Stuff each pasta shell generously with the mushroom filling. Arrange them in a greased baking dish.
  6. Pour marinara sauce evenly over the stuffed shells and sprinkle with remaining parmesan cheese. Cover with foil and bake for 20 minutes; uncover and bake for an additional 10 minutes until bubbling.
