Ingredients

  • All-Purpose Flour
  • Granulated Sugar
  • Brown Sugar
  • Baking Powder
  • Baking Soda
  • Ground Cinnamon
  • Nutmeg
  • Salt
  • Vegetable Oil
  • Eggs
  • Vanilla Extract
  • Grated Carrots
  • Cream Cheese (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans with non-stick spray and dust with flour.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until combined.
  3. In another bowl, mix vegetable oil with eggs and vanilla extract until smooth. Fold in grated carrots.
  4. Combine wet and dry ingredients until just mixed; pour batter into prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. For frosting, beat cream cheese and butter until fluffy; gradually add powdered sugar and vanilla extract until creamy.
  7. Spread frosting between layers and on top of the cooled cakes.
