  • 8 oz tri-color rotini pasta
  • 1 can (5 oz) good-quality tuna in olive oil, drained
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the tri-color rotini pasta in a large pot of salted boiling water until al dente; drain and rinse under cold water.
  2. In a large mixing bowl, combine the drained tuna with the cooled pasta.
  3. Add chopped cherry tomatoes, diced cucumber, and finely chopped red onion to the bowl.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Drizzle over the salad and toss gently to combine.
  5. Fold in the chopped parsley and basil just before serving.
  6. Chill in the refrigerator for at least 30 minutes to enhance flavors before serving.
