- 8 oz tri-color rotini pasta
- 1 can (5 oz) good-quality tuna in olive oil, drained
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- Juice of 1 lemon (about 2 tbsp)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the tri-color rotini pasta in a large pot of salted boiling water until al dente; drain and rinse under cold water.
- In a large mixing bowl, combine the drained tuna with the cooled pasta.
- Add chopped cherry tomatoes, diced cucumber, and finely chopped red onion to the bowl.
