  • 1 lb lean ground turkey
  • 2 cups stuffing mix
  • 1/2 cup low-sodium chicken broth
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 1 tsp sage, chopped
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1 cup shredded cheddar cheese (divided)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.
  2. In a skillet over medium heat, sauté diced onion and celery until translucent (about 5 minutes).
  3. In a large bowl, mix together ground turkey, stuffing mix, sautéed vegetables, chicken broth, eggs, parsley, sage, and half of the cheese until combined.
  4. Spoon the mixture into the muffin cups, filling them generously but leaving some space at the top.
  5. Top with remaining cheese if desired.
  6. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean. Allow to cool slightly before serving.
