- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
Instructions
- Season chicken breasts with salt, pepper, and olive oil. Grill over medium-high heat for 6-7 minutes on each side until cooked through (internal temperature should reach 165°F). Let cool.
- In a bowl, mix Greek yogurt, grated cucumber (squeeze out excess moisture), minced garlic, lemon juice, dill, salt, and pepper until well combined.
- Dice fresh vegetables like tomatoes or bell peppers while the chicken cools.
- Shred the chicken into bite-sized pieces and toss gently with the tzatziki sauce until coated.
- Serve chilled or at room temperature over a bed of lettuce or as is.
