  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Season chicken breasts with salt, pepper, and olive oil. Grill over medium-high heat for 6-7 minutes on each side until cooked through (internal temperature should reach 165°F). Let cool.
  2. In a bowl, mix Greek yogurt, grated cucumber (squeeze out excess moisture), minced garlic, lemon juice, dill, salt, and pepper until well combined.
  3. Dice fresh vegetables like tomatoes or bell peppers while the chicken cools.
  4. Shred the chicken into bite-sized pieces and toss gently with the tzatziki sauce until coated.
  5. Serve chilled or at room temperature over a bed of lettuce or as is.
